Therefore, the liver must be cooked with vegetables and herbs. Onions are rich in ascorbic acid. It is not without reason that it is most often added during the preparation of liver. If you eat liver at least once a week, you will never have anemia or anemia.

General recommendations for cooking chicken liver

You can prepare excellent chicken liver cutlets; a step-by-step recipe with photos will help you with this. Particular attention should be paid to the initial processing of the product; the liver must be thoroughly washed and pieces of fat removed with scissors. Then you can make minced meat from it using a meat grinder. To make cutlets easily, you need to add eggs.

In addition to eggs, you can add other products there. The most popular are flour, vegetables, cereals, and bread crumbs. But even the addition of these products will not ensure the thickness of the mass, so it is better to form liver cutlets from chicken liver using a spoon.

Before you start frying the product, the frying pan with oil must be thoroughly heated. Such cutlets are usually made without breading. Let's look at several options for making chicken liver cutlets.

Cutlets-pancakes with flour

Half a kilogram of chicken liver will be enough to feed a family. Process the product, removing all excess fat, and make minced meat. Place an onion in it. Next, add chopped garlic, an egg and a small amount of flour (5 tablespoons) to the mixture.

For splendor, you can put a small amount of baking powder or soda there, you can do without it. If you like savory dishes, then add a variety of spices to the minced meat; it is permissible to add any seasonings there. But if you are not a fan of this, then salt will be enough. You can also add chopped herbs to the cutlet mass.

Next, put the frying pan on the fire, heat it up and lay out the mixture in the same way as you usually fry pancakes. When the side is slightly browned, you can turn it over. To prevent chicken liver cutlets from turning out too oily, place them on a paper napkin, which will absorb all excess.

Liver cutlets with semolina

Semolina is an ideal product that gives cutlets tenderness and juiciness. The fact is that when it increases in size during cooking, the dish becomes more fluffy. That's why many people like to eat chicken liver cutlets with semolina.

Take 0.3 kg of chicken liver and grind in a meat grinder along with a head of onion. Don't forget to add the egg afterwards. For taste, you can put a little black pepper and spices in chicken liver cutlets. Add semolina, three tablespoons will be enough. Let the semolina increase, leave the mixture for a while, at least half an hour. Pour vegetable oil into the frying pan; for such cutlets, use more of it. It is necessary that it covers the bottom of the pan by 4 mm.

Spoon the cutlets into the hot oil. The cutlets are fried for no more than three minutes on each side. But if you have them very fluffy, then you need to rinse them well so that they are fried in the middle. Just cover the pan with a lid and let it cook for a few more minutes. But do not reduce the heat, otherwise they will be too greasy from the vegetable oil contained in the pan.

Bread cutlets with chicken liver

Never use fresh bread; it is not suitable for this dish. The bread should be stale. Pour a glass of milk over several pieces of bread (0.25 kg) to soak it. After a quarter of an hour, squeeze it out to get rid of excess milk. Make minced meat from pre-processed chicken liver, onions and bread. To thicken the mass, add an egg and two tablespoons of flour. Mix the mixture until you get a thick, homogeneous dough.

Fry the cutlets in hot vegetable oil, place them there using a tablespoon. 3 minutes over moderate heat - and the fluffy cutlets are ready. But that is not all. Now you will need to prepare the gravy from products such as broth, tomato juice, sour cream and cream. Place all the resulting cutlets in one frying pan, pour 50 ml of one of the above products into it and simmer for 5 minutes.

Rice cutlets

Take 0.1 kg of rice, wash it thoroughly, scald it with boiling water, and then get rid of unnecessary water. While the rice is cooling, cook the onions. Cut it into small pieces and fry a little in vegetable oil. Just don’t add too much vegetable oil, otherwise the chicken liver cutlets with rice will be too fatty later.

Make minced meat from the liver and a clove of garlic, add pre-cooked rice. Thicken the mixture with four tablespoons of flour. You should end up with a thick, viscous mass. Don't forget about salt and spices to enrich the taste of the cutlets.

Add vegetable oil to the frying pan. Place spoonfuls of minced meat onto the heated surface of the frying pan. To make rice cutlets more tender and juicy, simmer them in sour cream or tomato paste sauce. But you don’t have to do this, but the cutlets will then be drier.

Vegetable cutlets

Before adding to the minced meat, vegetables are pre-processed and fried in vegetable oil. With this cooking method you will get chicken liver cutlets with vegetables with a pleasant aroma and wonderful taste. You can use any vegetables that are not listed in the recipe if you wish. Cutlets with zucchini and eggplant turn out well. Some even add minced pumpkin. Use your own discretion.

Chop the lika onion, carrot, bell pepper or any other vegetable. First fry the onion, then add the carrots to it, add the pepper a few minutes later. Do not keep vegetables on the fire for a long time, a few minutes - and turn off the heat.

Make minced meat from half a kilogram of liver and a clove of garlic. Now combine everything you prepared earlier. Don't forget to add an egg and a few tablespoons of flour to this mixture (usually 3-4 tablespoons). Stir the mixture and then leave it in a cool place for a while. It is necessary for the mass to acquire a certain strength. Next, you can fry the cutlets in the usual way in a preheated frying pan. Try to cook the cutlets thoroughly inside.

Oatmeal chicken liver cutlets

Add oatmeal to the minced meat, you won’t regret it! This recipe for liver cutlets is suitable for those on a diet. Make minced meat from 0.5 kg of chicken liver, adding onion (1 pc.) and garlic (1 pc.)

Next, add an egg and half a cup of oatmeal. Mix the mass and leave for a while, about 40 minutes. It is better to put the cooked raw minced meat in the refrigerator so that it swells better. Before you start frying the cutlets, chop a bunch of dill and add it to the meat mixture.

Fry the juicy golden cutlets in vegetable oil. If you are ready to stick to a diet until the end, then frying in vegetable oil will not be the best option for you. Therefore, you can fry them in the oven without this high-calorie product. A silicone mat will help you; the cutlets will fry perfectly on it. The oven should be preheated, 12 minutes of baking will be enough.

Mushroom chicken cutlets

Any mushrooms are suitable for this version of cutlets. To make them better cooked, 0.25 grams of mushrooms must be boiled in salted water. Then cut them into cubes and fry in a frying pan along with the chopped onion. Add salt at the end. Make liver mince.

Then add grated cheese there. You can add chopped parsley for taste. And then add one tablespoon of sour cream, a raw egg, and, of course, mushrooms that you have already prepared in advance. Add a little more salt and pepper for taste. To thicken the mass, you need to add 3 tablespoons of flour. That's it, now everything is ready, you can fry.

Potato cutlets

Potatoes will not only enrich the taste of cutlets, but also make it more economical. You will get a huge number of cutlets, which you can feed the whole family to their fill. And if the sour cream sauce is delicious, it will complement the excellent taste of the dish.

To begin with, as usual, you need to make minced meat from products such as chicken liver and onions. Next, add the egg, flour (1 cup), and spices. Potatoes need to be grated, preferably finely. Mix with minced meat. Quickly form the cutlets and fry them, as the potatoes quickly darken. First make cutlets with a crust, frying them over high heat. Then reduce the heat and simmer a little until they are cooked inside.

Mix sour cream, chopped dill and a little soy sauce together, pour this mixture over the cutlets before placing them on the table.

Step 1: Prepare the ingredients.

The taste of the finished dish greatly depends on the freshness of the chicken liver. Therefore, it is important to approach its choice with full responsibility. When purchasing, we look carefully and be sure to smell.

So, the first sign is color. A good chicken liver should be brownish-burgundy in color, and its surface should be free of greenish spots. They appear if the gall bladder was damaged when cutting a chicken carcass. You should not take liver with a light yellow tint. Most likely she was frozen.

The second sign is the smell. Any unpleasant foreign odor indicates that the product is not fresh. Without a doubt, it is better to refuse such a purchase.

So we have some nice fresh chicken liver. It must be cleared of films and washed under running water.

Peel the onion and chop finely. If you don’t like large pieces, you can grate it.

Step 2: Prepare chicken liver cutlets.

To prepare cutlets, the liver must be chopped. This can be done using a meat grinder, blender or food processor. The result should be a homogeneous liver mass.

Add egg, onion, salt, pepper to it and mix. Then add flour. The quantity indicated in the recipe is approximate. Focus on the consistency of the mass.

Place the frying pan on the fire, add oil and heat well. Place cutlets by the tablespoon and fry over medium heat on both sides until cooked through (about 5 minutes on each side). The liver cooks quickly, but do not rush to turn it over immediately so as not to ruin the shape. Transfer the finished cutlets to a dinner plate.

Step 3: Serve chicken liver cutlets.

Chicken liver cutlets go well with various vegetables, fried, boiled or stewed, fresh vegetables and herbs. Their taste will be emphasized by creamy, milk, mushroom or tomato-soy sauce. However, with the usual estimate it also turns out very tasty.

Bon appetit!

You can add not fresh onions to the liver cutlet mass, but sautéed (fried in a small amount of oil) with grated carrots, it turns out unusual and tasty;

Spicy vegetables and herbs can significantly change and improve the taste of the liver, so in addition to black pepper, you can add other spices, for example, nutmeg, tarragon, marjoram, and red pepper.
